



The story of Domaine des Châteaux begins long before its name.
It takes root in a 17th-century manor house in Ottrott, when in 1970 Sabine and Ernest Schaetzel opened a few guest rooms with one simple idea: to welcome people as you would open your own front door, with sincerity, warmth and the pleasure of sharing.
Here, nothing is calculated; everything is human.
Travellers come back for Ernest's cooking, for Sabine's smile, for that feeling of a house where you are expected and at ease. What was meant to be a small address soon became a cherished retreat, a place where Alsatian hospitality expresses itself effortlessly.


In 1978, the house became a hotel-restaurant. The years passed, rooms multiplied, spaces widened, facilities were modernised… but the essential remained intact.
Every transformation is designed to improve comfort without breaking with the original spirit: gentleness, simplicity, generosity.
The opening of the Spa des Châteaux - one of the first large hotel spas in Alsace - marked a turning point. Wellness became a pillar of the place, without ever erasing its family dimension.
Today, Aurélie, Guillaume and Alina naturally continue their parents' work.
They have not simply taken over a house: they carry its roots, its memory, and that unique way of being present without ever imposing.
Their attentiveness, their availability, their eye for detail sustain that singular atmosphere, often described as “the soul of the Châteaux”.

In 2026, the house changes its name.
The Hostellerie des Châteaux officially becomes the Domaine des Châteaux.
A change that breaks nothing: it reveals what the place has become over the years.
An estate to be lived in, between spas, pools, gardens, restaurant, lodges, residence, terroir and nature.
A destination in its own right, where everyone can invent their own stay.

Projects continue, spaces are renewed, and the experience grows richer, not least with the arrival of the future Forest Spa. But the values remain the same: kindness, generosity, respect for each person's own pace.
The ambition has not changed since 1970: to offer a genuine, warm, memorable stay, and a little of that Alsace that does you good.
Since 1971, the Schaetzel family has been welcoming visitors in Ottrott and growing the property from one generation to the next.
Born of a family venture, Domaine des Châteaux has gradually become, over the decades, a 4-star spa hotel, while preserving what has defined it from the outset: warm hospitality, a deep attachment to Alsace and a long-term family vision.
More than fifty years on, this family continuity remains at the heart of the experience we offer our visitors.
The name "Domaine des Châteaux" follows on from the Hostellerie des Châteaux and pays tribute to the exceptional heritage surrounding Ottrott.
The castles of Ottrott and the many fortresses scattered across the Mont Sainte-Odile massif are an integral part of the village's history and landscape.
The name therefore reflects our attachment to our region, between castles, forest, Mont Sainte-Odile and the Alsatian vineyards.
From a family inn created in 1971, the property has gradually become a 4-star spa hotel, today offering accommodation, wellness, fine dining and many experiences centred on Alsace.
Each generation has brought new ideas, new spaces and new investment, with one shared intention: to keep the house evolving without losing its family identity.

Domaine des Châteaux is an independent family business, developed and run by the Schaetzel family since its creation.
This independence allows us to retain genuine freedom in our choices, to favour a long-term vision, to reinvest continuously in the property and to preserve a more personal relationship with our guests.
It also allows us to develop the Domaine according to our own vision, rather than reproducing the standards of a hotel chain.
Our identity rests above all on hospitality, conviviality, passing things on, attachment to our region, respect for nature, fine dining and wellness.
